Anjeer & Badam Burfi (Fig)

Anjeer & Badam Burfi (Fig)

A classic 2 ingredient burfi made with sweet dried figs and roasted almonds. The sweetness comes solely from the figs. This wholesome sweet can be enjoyed during festivals or even as a gift. Almonds contain high levels of vitamin E, magnesium, protein and mono-unsaturated fats. The dried figs are full of fibre, calcium and potassium. Cardamom also gives a nice warming aroma which helps digestion.

Ingredients

  • •120g dried figs (anjeer) (stems removed)
  • •100g almonds (80g ground, 20g slivered)
  • •1 tbsp ghee
  • •1/2 tsp cardamom powder
  • •Pinch salt
  • •Warm water

Method

  1. 1

Soak the figs in warm water for 15-20 mins. Drain and remove the tough stems. Place in a food processor and blend until smooth and thick.

  2. 2

Dry roast the almonds on a low heat for 4-5 mins until they become fragrant. Once cooled, grind 80g until coarsely ground. Chop the remaining 20g into slivers.

  3. 3

Melt the ghee in a pan on a low heat. Add the figs and cook for 3-4 mins whilst stirring. They should start to thicken and stick to the sides of the pan.

  4. 4

Take off the heat. Add the almonds, cardamom and salt. Mix to form a soft dough.

  5. 5

Press into a lined and greased 6inch tray. Top with the almond slivers and press gently into the mixture. Place in the fridge to chill for 1 hour.

  6. 6

    Cut into 12 pieces.
