Cook cauliflower and shallots in large pot of boiling salted water until tender, 8 to 10 minutes. Drain well.
Place amaranth seeds on a non-stick skillet and roast it.
Drizzle the olive oil in a small saucepan over medium heat. Add the garlic and sauté for about a minute, then add the spinach and continue sauteing until the spinach just begins to wilt.
Place the cooked vegetables in processor. Add spinach, roasted amaranth seeds and oil. Blend to smooth puree.
Season to taste with salt and pepper.
Last, sprinkle almonds on it, and serve well.
