Ensure the boiled chickpeas are completely dry
Transfer chickpeas to a wide mixing bowl. Use a potato masher or fork to crush them until roughly 70–80% mashed, leaving some coarse pieces intact for texture .
Add onion, grated garlic, squeezed grated carrot, chopped coriander, ground oats, lemon juice, and all spice powders to the mashed chickpeas.
Mix thoroughly until a cohesive dough forms. Let it rest for 8–10 minutes.
Divide the mixture into 4 equal portions. Compact each firmly between your palms and shape into ½-inch thick round patties, smoothing any cracked edges with damp fingertips.
Heat an iron tava or skillet over medium heat and brush with 1 tsp oil. Place the patties and cook undisturbed for 4 - 5 minutes until a deep golden-brown crust forms. Flip gently with a wide spatula and cook the other side for 3 - 4 minutes.
Spread your dip or chutney on the bottom toasted bun (whole wheat or multigrain bun), layer with crisp lettuce, set the hot chickpea patty on top, finish with tomato and onion slices, and cover with the top bun.
