A chocolate dessert does not have to be loaded with sugar. This mousse is made with thick greek yogurt, a scoop of protein and a generous amount of unsweetened cocoa making it rich, creamy and very filling yet high in protein and without any refined sugars. Soft dates are blended to a sweet, thick paste adding just enough natural sweetness and tart fresh raspberries are used to balance the deep chocolaty flavor also mashed to a chunky compote and layered through the glass. No need for any special equipment or lengthy preparation, just a few minutes of mixing and a couple of hours in the fridge. It is a great after dinner treat, a healthy post-workout dessert or an alternative to the traditional chocolate mousse. Nutritional Benefits: Greek yogurt and whey protein provide high quality protein to help repair muscles and keep you feeling full, plus they are high in calcium. Unsweetened cocoa is high in fiber, magnesium and flavanols, while raspberries are a good source of vitamin C, fiber and antioxidants and the sweet dates contain natural sugars, potassium and fiber.

Mash half of the raspberries (about 1/2 cup) with a fork into a coarse compote. Keep the rest whole for layering and topping.
If the dates are firm, soak them in warm water for 10 minutes and drain.
Blend the dates with the unsweetened almond milk and vanilla extract until you get a smooth paste.
Sieve the cocoa into a bowl or a blender, add the yogurt, whey protein, date paste and salt and mix or blend until thick and smooth. If the mixture is too thick, add a little bit more unsweetened almond milk.
Spoon a little bit of the raspberry compote into two glasses, then add some mousse on the top. Repeat the layers a couple of times and finish with mousse on the top.
Put the mousse in the fridge for at least 2 hours to firm up and chill.
Top the mousse with the whole raspberries, mint leaves and a little bit of cocoa for a nice touch of flavor. Serve it chilled.
