Date and Nut Barfi

This barfi replaces refined sugar and khoya with dates and a mix of nuts, so that the sweetness and the bite comes from whole ingredients rather than syrup. A touch of edible silver leaf on top keeps it festive without altering the nutrition profile. Ingredients

  • •1.5 cups dates, deseeded
  • •1/2 cup almonds
  • •1/2 cup cashews
  • •1/4 cup walnuts
  • •2 tablespoons desiccated coconut
  • •1 tablespoon ghee
  • •1/2 teaspoon cardamom powder
  • •Edible silver leaf for garnish, optional

Method

    Dry roast the almonds, cashews and walnuts on low heat for 3 to 4 minutes, then let them cool and pulse in a blender to a coarse powder.

    Warm the ghee in a pan, add the dates, and cook on low heat for 4 to 5 minutes, mashing them until they form a soft, sticky paste.

    Add the ground nuts, desiccated coconut and cardamom powder to the date paste, and mix until the mixture comes together evenly.

    Transfer the mixture onto a sheet of parchment paper and press it into a flat rectangle, roughly half an inch thick.

    Top with edible silver leaf if using, and refrigerate for 30 minutes before cutting into squares.
