Egg biryani

Craving biryani but looking for a simple, protein-rich version? This flavourful egg biryani combines fragrant basmati rice with nutrient-rich eggs and aromatic spices for a satisfying one-pot meal. Eggs provide high-quality protein along with nutrients such as vitamin B12, choline and selenium, while onions and spices add antioxidants and plenty of flavour. Cinnamon, cloves and black pepper also bring natural plant compounds that make this dish both aromatic and nourishing.

Ingredients

  • •2 whole eggs
  • •Basmati rice, raw — 30-35 g
  • •Onion, thinly sliced — 40 g
  • •Green chilli, finely chopped — 5 g
  • •Ginger-garlic paste — 8 g
  • •Oil — 1 tsp
  • •Bay leaf — ½
  • •Cloves — 2
  • •Black peppercorns — ¼ tsp
  • •Cinnamon — ½-inch piece
  • •Turmeric powder — ⅛ tsp
  • •Red chilli powder — ¼ tsp
  • •Biryani masala — ½ tsp
  • •Fresh coriander, chopped — 1 tbsp
  • •Salt — to taste
  • •Water — as required

Method

    Boil the eggs until fully cooked. Peel them and keep aside.

    Wash the basmati rice thoroughly and cook it in sufficient water until almost done. Drain and keep aside.

    Heat oil in a heavy-bottomed pan over medium heat. Add the bay leaf, cloves, black peppercorns and cinnamon. Sauté for a few seconds until fragrant.

    Add the sliced onion and green chilli. Cook until the onion becomes light golden.

    Add the ginger-garlic paste, turmeric powder, red chilli powder and biryani masala. Sauté for 1–2 minutes until the raw aroma disappears.

    Add the cooked and drained rice and gently mix until it is evenly coated with the spices.

    Add the boiled eggs and gently mix, or place them on top of the rice.

    Cover the pan and cook on low heat for 5–7 minutes, allowing the rice to absorb the flavours.

    Garnish with fresh coriander and serve hot.
