Egg Fritters

Crispy, flavourful and protein-rich, these egg fritters are a wholesome twist on the classic pakora. Eggs provide high-quality protein, vitamin B12, choline and selenium, while gram flour adds plant-based protein and fibre. Fresh coriander and spices add antioxidants and flavour, making these fritters a delicious snack or light meal.

Ingredients

  • •2 whole eggs
  • •Gram flour (besan) — 30 g
  • •Red chilli powder — ¼ tsp
  • •Fresh coriander, finely chopped — 1 tbsp (5 g)
  • •Salt — to taste
  • •Water — 2–3 tbsp, as required
  • •Oil — 2 tsp for shallow frying

Method

    Boil the eggs until fully cooked. Peel them and carefully cut each egg into two halves.

    In a bowl, add gram flour, red chilli powder, chopped coriander and salt.

    Gradually add water and mix to form a thick, smooth coating batter.

    Gently place the boiled egg halves into the batter and coat them evenly.

    Heat oil in a non-stick pan over medium heat.

    Place the coated egg halves in the pan and cook until golden and crisp on both sides.

    Remove from the pan and place on a kitchen towel to absorb excess oil.

    Serve hot with mint or coriander chutney.
