Boil the eggs until fully cooked. Peel them and carefully cut each egg into two halves.
In a bowl, add gram flour, red chilli powder, chopped coriander and salt.
Gradually add water and mix to form a thick, smooth coating batter.
Gently place the boiled egg halves into the batter and coat them evenly.
Heat oil in a non-stick pan over medium heat.
Place the coated egg halves in the pan and cook until golden and crisp on both sides.
Remove from the pan and place on a kitchen towel to absorb excess oil.
Serve hot with mint or coriander chutney.
