Ingredients

  • •2 whole eggs
  • •2 slices whole-wheat bread
  • •Bell pepper, finely chopped — 20 g
  • •Onion, finely chopped — 20 g
  • •Tomato, finely chopped — 30 g
  • •Cucumber, finely chopped — 30 g
  • •Mint chutney — 15 g
  • •Black pepper powder — ¼ tsp
  • •Salt — to taste
  • •Oil or cooking spray — ½ tsp

Method

    Boil the eggs until fully cooked. Peel and chop them into small pieces.

    Add the chopped bell pepper, onion, tomato and cucumber to the eggs.

    Add the mint chutney, salt and black pepper. Mix well until all the ingredients are evenly combined.

    Spread the egg and vegetable mixture evenly over one slice of whole-wheat bread and cover with the second slice.

    Lightly toast the sandwich on a non-stick pan using a small amount of oil or cooking spray until golden and crisp on both sides.

    Cut into halves and serve hot.
