Grilled Paneer with Bell peppers and Zucchini Skewers

Grilled skewers are a simple way of turning a few pantry staples into dinner that feels indulgent without being heavy. This version uses cubes of paneer with bell peppers and zucchini, all coated with a quick curd based marinade instead of a heavy sauce. It comes together in under thirty minutes, needs nothing more than a pan or a grill, and can be enjoyed either as a stand alone dinner or as a side with a light dal. Ingredients

  • •200 grams paneer, cubed
  • •1 green bell pepper, cubed
  • •1 red bell pepper, cubed
  • •1 small zucchini, sliced
  • •1 tablespoon curd
  • •1 teaspoon ginger garlic paste
  • •1/2 teaspoon turmeric powder
  • •1 teaspoon red chilli powder
  • •1 teaspoon garam masala
  • •1 teaspoon mustard oil
  • •Salt to taste

Method

    In a bowl, mix curd, ginger garlic paste, turmeric, chilli powder, garam masala, oil and salt to make the marinade.

    Add the paneer cubes and vegetables to the marinade and coat well. Rest for 15 minutes.

    Thread the paneer and vegetables onto skewers, alternating the pieces.

    Grill or pan roast on medium heat, turning occasionally, until lightly charred on all sides.
