Ingredients

  • •10-12 Medjool dates / Dates
  • •1 cup rolled oats
  • •½ cup finely chopped almonds
  • •½ cup almonds
  • •1 tbsp chia seeds
  • •4 tbsp lemon juice
  • •1 tsp lemon zest
  • •1 tsp vanilla extract
  • •1 tsp turmeric powder
  • •Pinch of black pepper
  • •½ cup shredded coconut for dusting

Method

    After removing the dates’ pits, give them a few minutes to soak in the hot water. Drain the dates after they have softened, then add them to the food processor. Conserve water.

    Add the remaining ingredients to a food processor and process until the mixture resembles dough. If the mixture is too dry, add 1 tablespoon of the water you soaked the dates in.

    Scoop the mixture with the small spoon and shape it into balls. Place the balls on the baking sheet after rolling them in the coconut shreds.

    Keep energy balls in the fridge in an airtight container, serve chilled.
