In a mixing bowl, combine ragi flour, salt, garlic powder, and dried herbs. Add 1 tbsp olive oil and mix into the flour. Gradually incorporate warm water and knead for 3–4 minutes until a smooth, non-sticky, pliable dough ball forms.
Divide the dough into two equal portions. Place each ball between two sheets of parchment paper (or a lightly oiled surface) and roll or gently press out with your fingers into a 6–7 inch round base, roughly ¼-inch thick. Prick the entire surface with a fork to prevent puffing.
Heat a flat tawa or skillet over medium heat. Carefully transfer the rolled base onto the tawa. Cook for 2 minutes on the underside, flip, and cook the top side for another 1–2 minutes until firm and dry to the touch. Remove from heat.
Place bases on a lined baking tray and pre-bake at 200°C (400°F) for 6–8 minutes until firm.
Spread 2 tablespoons of tomato sauce evenly over the pre-cooked side of each crust. Scatter half the mozzarella cheese, arrange sliced onions, bell peppers, and mushrooms, then top with the remaining cheese. Melt and crisp
Place the assembled pizza back on the tawa over a low flame. Cover tightly with a domed lid and cook on low heat for 5–7 minutes until the cheese is completely melted and the bottom crust turns crisp.
Bake at 200°C (400°F) for 7–9 minutes, optionally turning on the broiler for the final 60 seconds until the cheese is bubbling and golden.
Finish and serve: Sprinkle with chilli flakes, oregano, and torn basil. Slice warm and serve immediately.
