Moong Dal khichdi

Ingredients

  • •1/2 cup split yellow moong dal
  • •1/2 cup rice, rinsed
  • •1/2 cup chopped mixed vegetables such as carrot, beans and peas
  • •1/2 teaspoon turmeric powder
  • •1/2 teaspoon cumin seeds
  • •1 teaspoon ghee
  • •1 bay leaf
  • •3 cups water
  • •Salt to taste

    Wash the moong dal and rice together and soak for 10 minutes.

    Heat ghee in a pressure cooker, add the cumin seeds and bay leaf, and let them splutter.

    Add the mixed vegetables and saute for 2 minutes.

    Add the soaked dal and rice along with turmeric, salt and water.

    Pressure cook for 3 to 4 whistles until the dal and rice turn soft and slightly mushy. Serve hot with a small drizzle of ghee.
