Sparkling Pomegranate and Rose Mocktail with Chia

Sparkling Pomegranate and Rose Mocktail with Chia

Introduction The majority of bottled mocktails are just sugar syrup and soda. The sweetness in this drink is extracted from fresh pomegranate, which also gives a deep ruby color, along with a sour, fruity flavor to the mocktail. A splash of rose water gives this drink a nice floral note that complements the pomegranate. Fresh mint and lemon juice add a tangy twist to the mocktail. The soaked chia seeds on the bottom provide an interesting jelly-like texture, and the sparkling water on top gives the drink its fizz. It looks good in a tall glass, only takes a few minutes to make, and is a perfect addition to your holiday get-together, summer barbecues, or a fancy mocktail without any added sugars. Nutritional Benefits Of The Mocktail: Pomegranate is high in antioxidants and is a good source of vitamin C and potassium. Chia seeds provide a good amount of fiber, plant-based omega-3 fatty acids, and have some protein, which helps you to feel full for a longer time. Lemon adds more vitamin C, mint has traditionally been used to aid digestion, and rose water has a refreshing floral note. Using sparkling water instead of soda helps to avoid extra sugars.

Ingredients

  • •3/4 cup fresh pomegranate juice (from about 2 medium pomegranates)
  • •1/4 cup whole pomegranate arils
  • •2 tbsp chia seeds
  • •1/2 cup water, for soaking the chia
  • •1 tsp food-grade rose water
  • •2 tsp lemon juice
  • •8-10 mint leaves
  • •1 1/2 cups chilled unsweetened sparkling water
  • •Ice cubes
  • •1 tsp edible dried rose petals, for garnish (optional)
  • •Pinch of black salt (optional

Method

  1. 1

Soak the chia seeds in 1/2 cup water. Stir after 2 minutes so they do not clump, then leave for 15 minutes until gel-like.

  2. 2

Deseed the pomegranates. Set aside 1/4 cup whole arils, then pulse the rest briefly in a blender so the seeds do not break, and strain to get about 3/4 cup juice. Chill the juice.

  3. 3

Lightly crush the mint leaves with the lemon juice, rose water, and black salt (if using) in a jug or in the glasses.

  4. 4

Divide the soaked chia and whole arils between 2 tall glasses and fill with ice.

  5. 5

Pour the pomegranate juice over the ice, then top up with chilled sparkling water.

  6. 6

Stir gently, garnish with mint and rose petals, and serve immediately while it is fizzy.
