Toasted Quinoa and Roasted Root Vegetable Bowl

This bowl takes a slightly different approach from the rest of the recipes in this collection, using quinoa in place of a millet and building the plate around roasted vegetables rather than a curry. Toasting the quinoa lightly before boiling it brings out a nuttier flavour, and roasting the sweet potato, beetroot and carrot concentrates their natural sweetness, so the dish needs very little additional seasoning beyond salt, pepper and a squeeze of lemon. It is a good choice for a lighter dinner, or for anyone wanting a meal that leans more toward a salad bowl than a traditional Indian curry and roti plate.   • •3/4 cup quinoa, rinsed
  • •1 sweet potato, diced
  • •1 beetroot, diced
  • •1 carrot, diced
  • •1 tsp olive oil
  • •1/2 tsp cumin powder
  • •Salt and pepper to taste
  • •1 tbsp lemon juice
  • •A handful of rocket or spinach leaves
  • •1 tbsp pumpkin seeds, toasted

Method

    Preheat the oven to 200 degrees Celsius. Toss the sweet potato, beetroot and carrot with olive oil, cumin powder, salt and pepper.

    2. Spread on a baking tray and roast for 20 to 25 minutes, turning once, until tender and lightly charred at the edges.

    3. Meanwhile, dry toast the quinoa for two to three minutes until fragrant, then cook in double the volume of water until translucent.

    4. Assemble the bowl with quinoa as the base, the roasted vegetables on top, and the rocket or spinach leaves alongside.
