Preheat the oven to 375°F (190°C).
Cut the top off each bell pepper and remove the seeds and membranes. Rinse the peppers and set them aside.
Heat 1 tablespoon of olive oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add minced garlic and sauté for a minute until fragrant.
Add chopped onions and cook until they become translucent.
Add grated cauliflower, carrots, and zucchini to the pan. Stir well.
Add turmeric powder, red chili powder, and salt. Mix everything together and cook for about 5 minutes until the vegetables are tender.
Stuff each bell pepper with the vegetable mixture and place them on a baking tray.
Drizzle the remaining olive oil over the stuffed bell peppers.
Bake in the preheated oven for 25-30 minutes until the peppers are tender and slightly charred.
Garnish with fresh cilantro leaves before serving.
